做法:春(chūn )笋切成(chéng )片后(hòu )加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切成(chéng )段(duàn )。锅(guō )烧(shāo )热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻(fān )炒(chǎo )1分钟左右(yòu )。再加(jiā )入(rù )生抽、老抽(chōu )、蚝油翻(fān )炒(chǎo )均匀,加(jiā )入少量清水(shuǐ )半(bàn )掩(yǎn )住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转(zhuǎn )中火(huǒ )。煮到水(shuǐ )快熬干(gàn )的时候加(jiā )入(rù )盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖焖。
