做法:春(chūn )笋切成片后(hòu )加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺油(yóu ),放入(rù )生姜(jiāng )、春(chūn )笋(sǔn )、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入(rù )生(shēng )抽(chōu )、老抽(chōu )、蚝油(yóu )翻炒(chǎo )均(jun1 )匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅(guō )盖大(dà )火煮(zhǔ )开后(hòu )转中(zhōng )火(huǒ )。煮(zhǔ )到水快熬干(gàn )的(de )时候(hòu )加入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
