做法:春(chūn )笋(sǔn )切成(chéng )片后加少(shǎo )许(xǔ )盐(yán )捞出后用清水浸泡(pào ),生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入2勺油(yóu ),放入(rù )生(shēng )姜、春笋(sǔn )、牛(niú )肉片、葱段(duàn )翻(fān )炒1分(fèn )钟左右。再加(jiā )入生(shēng )抽、老抽(chōu )、蚝(háo )油翻炒(chǎo )均匀(yún ),加入少(shǎo )量清水(shuǐ )半掩(yǎn )住春笋,盖上锅(guō )盖大火煮(zhǔ )开后(hòu )转中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍(shāo )收汁(zhī )时盖(gài )上锅(guō )盖(gài )焖。
