做法(fǎ ):春(chūn )笋切成(chéng )片后(hòu )加(jiā )少许盐捞出后(hòu )用清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热(rè ),倒入(rù )2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩(yǎn )住(zhù )春笋,盖上(shàng )锅盖(gài )大火煮(zhǔ )开(kāi )后(hòu )转中火。煮到(dào )水(shuǐ )快熬干的(de )时(shí )候加(jiā )入(rù )盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅(guō )盖(gài )焖。
