做法:春笋(sǔn )切成(chéng )片后加少许盐(yán )捞出(chū )后(hòu )用清(qīng )水浸泡(pào ),生姜切片,葱切(qiē )成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉(ròu )片(piàn )、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老(lǎo )抽(chōu )、蚝油翻(fān )炒均匀,加入(rù )少量清水半掩(yǎn )住(zhù )春笋,盖上锅(guō )盖大火煮开(kāi )后转中火(huǒ )。煮到(dào )水快熬干(gàn )的(de )时候(hòu )加入盐(yán ),翻炒(chǎo )均匀(yún )稍收(shōu )汁(zhī )时(shí )盖上锅(guō )盖焖。
