做法:春笋切成(chéng )片后加(jiā )少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜(jiāng )切(qiē )片,葱(cōng )切成(chéng )段。锅(guō )烧热,倒(dǎo )入(rù )2勺(sháo )油,放入(rù )生(shēng )姜、春笋(sǔn )、牛(niú )肉(ròu )片、葱段(duàn )翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩住春(chūn )笋(sǔn ),盖(gài )上锅盖(gài )大(dà )火煮开(kāi )后转中火。煮(zhǔ )到(dào )水快熬(áo )干的时候加入(rù )盐,翻(fān )炒(chǎo )均匀稍收(shōu )汁时盖(gài )上锅盖焖。
