做法(fǎ ):洗(xǐ )净宰好(hǎo )鲫鱼,洗(xǐ )净淮山和(hé )薏米(mǐ )。用清(qīng )水(shuǐ )把陈皮(pí )泡软,拍裂一(yī )小块姜,热(rè )锅,用(yòng )姜块在(zài )锅上擦一遍,放两(liǎng )勺油,待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲(bāo )里的(de )清(qīng )水,放入煎煮好的(de )鲫鱼和(hé )其他材(cái )料(liào ),武火(huǒ )煮(zhǔ )沸,转中小火煲一个半(bàn )小(xiǎo )时,下盐(yán )调味(wèi )即(jí )可品(pǐn )尝。
