做法(fǎ ):洗(xǐ )净(jìng )宰好(hǎo )鲫鱼,洗净(jìng )淮山和(hé )薏米。用清(qīng )水把陈皮(pí )泡(pào )软,拍裂一小(xiǎo )块姜,热锅,用姜块(kuài )在锅(guō )上(shàng )擦一遍,放两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的(de )清水(shuǐ ),放入(rù )煎(jiān )煮(zhǔ )好(hǎo )的鲫鱼(yú )和其(qí )他(tā )材料,武(wǔ )火(huǒ )煮沸,转(zhuǎn )中小(xiǎo )火煲(bāo )一个半(bàn )小时,下(xià )盐调味即可品尝。
