做(zuò )法(fǎ ):洗净宰好鲫鱼,洗(xǐ )净(jìng )淮山和薏(yì )米。用清水(shuǐ )把陈(chén )皮(pí )泡(pào )软(ruǎn ),拍裂(liè )一(yī )小(xiǎo )块姜,热锅(guō ),用姜(jiāng )块(kuài )在锅上擦一遍,放两(liǎng )勺油,待油六(liù )成热下鱼(yú ),煎至微(wēi )黄。煮(zhǔ )沸瓦煲里的(de )清水,放(fàng )入(rù )煎煮好的鲫鱼(yú )和(hé )其他材料,武(wǔ )火煮(zhǔ )沸,转中小火煲一(yī )个(gè )半小时,下盐(yán )调味即可品尝。
