做法(fǎ ):春(chūn )笋切(qiē )成片后加少(shǎo )许盐(yán )捞出后(hòu )用(yòng )清水浸(jìn )泡(pào ),生(shēng )姜切(qiē )片,葱(cōng )切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉(ròu )片、葱段翻炒(chǎo )1分(fèn )钟左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻(fān )炒(chǎo )均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上锅(guō )盖大火(huǒ )煮(zhǔ )开后转中(zhōng )火。煮(zhǔ )到(dào )水快(kuài )熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖。
