做(zuò )法:春笋切成(chéng )片(piàn )后(hòu )加(jiā )少许盐捞出后用清水(shuǐ )浸泡(pào ),生姜切片(piàn ),葱(cōng )切成(chéng )段(duàn )。锅烧热(rè ),倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入(rù )生抽、老抽、蚝油(yóu )翻(fān )炒均(jun1 )匀,加入少量(liàng )清水半掩住(zhù )春笋(sǔn ),盖上(shàng )锅盖(gài )大(dà )火煮开后转中火。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均(jun1 )匀稍收汁(zhī )时盖上(shàng )锅盖(gài )焖。
