做(zuò )法:洗净(jìng )宰(zǎi )好鲫鱼(yú ),洗(xǐ )净淮山和(hé )薏米。用清(qīng )水把陈皮泡软,拍(pāi )裂一小块姜,热(rè )锅,用(yòng )姜块(kuài )在(zài )锅上擦(cā )一遍(biàn ),放(fàng )两勺油(yóu ),待油六成热下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的(de )清水,放入(rù )煎煮好(hǎo )的鲫(jì )鱼(yú )和其(qí )他材料,武(wǔ )火煮(zhǔ )沸,转中(zhōng )小(xiǎo )火(huǒ )煲一个半小时(shí ),下盐调(diào )味即可品尝。
