做法:洗(xǐ )净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米(mǐ )。用(yòng )清(qīng )水(shuǐ )把陈(chén )皮泡软,拍(pāi )裂(liè )一(yī )小块姜,热锅,用姜块在(zài )锅(guō )上擦一遍,放两(liǎng )勺油,待油(yóu )六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放入煎煮好(hǎo )的鲫鱼(yú )和(hé )其他材料(liào ),武火煮沸,转(zhuǎn )中小火(huǒ )煲(bāo )一个半(bàn )小(xiǎo )时(shí ),下(xià )盐调味(wèi )即(jí )可品(pǐn )尝。
