做法:春笋(sǔn )切成片(piàn )后加(jiā )少(shǎo )许盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱切(qiē )成(chéng )段(duàn )。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜(jiāng )、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量(liàng )清(qīng )水半掩住(zhù )春笋,盖(gài )上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候(hòu )加入盐(yán ),翻(fān )炒均匀(yún )稍(shāo )收汁(zhī )时盖上锅盖焖(mèn )。
