做(zuò )法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用清(qīng )水浸泡(pào ),生姜切(qiē )片,葱切(qiē )成段。锅(guō )烧(shāo )热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分(fèn )钟左(zuǒ )右。再加入(rù )生抽、老抽、蚝油(yóu )翻炒均匀(yún ),加(jiā )入少(shǎo )量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火煮(zhǔ )开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加(jiā )入盐(yán ),翻炒均(jun1 )匀稍收(shōu )汁时(shí )盖上锅盖焖(mèn )。
