做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净(jìng )淮山(shān )和薏(yì )米。用清(qīng )水把陈(chén )皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜块在锅上擦(cā )一遍(biàn ),放两勺(sháo )油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦(wǎ )煲(bāo )里的(de )清(qīng )水,放(fàng )入(rù )煎煮(zhǔ )好的鲫鱼和其他材(cái )料,武(wǔ )火煮沸,转中(zhōng )小(xiǎo )火煲(bāo )一(yī )个半小时(shí ),下盐调味(wèi )即可品(pǐn )尝。
