做法:洗净宰好(hǎo )鲫鱼(yú ),洗净(jìng )淮山(shān )和薏米(mǐ )。用(yòng )清水(shuǐ )把陈皮泡(pào )软,拍裂一小块(kuài )姜(jiāng ),热锅,用姜(jiāng )块在锅上擦(cā )一遍,放(fàng )两勺(sháo )油(yóu ),待油(yóu )六(liù )成热下鱼(yú ),煎(jiān )至(zhì )微黄。煮沸瓦煲里的清(qīng )水,放(fàng )入煎煮好的(de )鲫(jì )鱼(yú )和其他材料,武火煮(zhǔ )沸,转中(zhōng )小火煲一(yī )个半(bàn )小时,下盐调味(wèi )即可品尝。
