做法(fǎ ):春笋切成片后(hòu )加(jiā )少许(xǔ )盐(yán )捞出后用清水浸泡,生(shēng )姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉(ròu )片、葱(cōng )段(duàn )翻(fān )炒1分(fèn )钟左(zuǒ )右(yòu )。再加(jiā )入生(shēng )抽、老抽、蚝油翻(fān )炒均匀(yún ),加(jiā )入少(shǎo )量清(qīng )水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大(dà )火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时(shí )候加(jiā )入盐,翻炒均(jun1 )匀(yún )稍(shāo )收汁时盖上锅盖焖(mèn )。
