做(zuò )法:春(chūn )笋切(qiē )成(chéng )片后加(jiā )少(shǎo )许盐捞出后(hòu )用清(qīng )水(shuǐ )浸(jìn )泡,生姜切片(piàn ),葱(cōng )切成段。锅(guō )烧热,倒(dǎo )入(rù )2勺油(yóu ),放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟(zhōng )左右。再(zài )加入生(shēng )抽(chōu )、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖大火煮开(kāi )后(hòu )转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐(yán ),翻炒(chǎo )均匀稍收(shōu )汁时(shí )盖上锅盖焖(mèn )。
