做法:春笋切(qiē )成片(piàn )后加(jiā )少许盐捞(lāo )出后(hòu )用清水浸泡,生(shēng )姜切片,葱切成(chéng )段(duàn )。锅烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片(piàn )、葱(cōng )段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老(lǎo )抽(chōu )、蚝(háo )油翻炒均匀,加(jiā )入(rù )少量清(qīng )水(shuǐ )半掩住春笋,盖上锅(guō )盖(gài )大火(huǒ )煮开后转中火。煮到水快熬干的(de )时候加(jiā )入(rù )盐(yán ),翻炒均匀(yún )稍收汁(zhī )时盖(gài )上(shàng )锅(guō )盖焖(mèn )。
