做(zuò )法:春(chūn )笋切(qiē )成片后加少许盐捞(lāo )出(chū )后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热(rè ),倒(dǎo )入2勺油(yóu ),放入(rù )生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分(fèn )钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻(fān )炒均(jun1 )匀,加入少(shǎo )量清水半(bàn )掩住(zhù )春笋,盖上锅(guō )盖大火煮(zhǔ )开后(hòu )转(zhuǎn )中火。煮到(dào )水快熬干的时(shí )候(hòu )加入盐(yán ),翻炒均(jun1 )匀稍(shāo )收汁时盖上(shàng )锅(guō )盖焖。
