做法:春笋切成(chéng )片后加(jiā )少(shǎo )许(xǔ )盐(yán )捞出(chū )后(hòu )用清(qīng )水浸(jìn )泡,生姜(jiāng )切片,葱切成段(duàn )。锅(guō )烧热,倒(dǎo )入2勺油(yóu ),放(fàng )入生(shēng )姜(jiāng )、春(chūn )笋、牛肉片、葱(cōng )段(duàn )翻炒1分(fèn )钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖(gài )上锅盖大火煮(zhǔ )开(kāi )后转(zhuǎn )中火(huǒ )。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。
