做法:洗(xǐ )净宰好(hǎo )鲫(jì )鱼,洗(xǐ )净(jìng )淮山(shān )和(hé )薏米。用清水(shuǐ )把陈皮泡软,拍(pāi )裂(liè )一小块(kuài )姜,热锅,用姜(jiāng )块在锅上擦一遍,放两(liǎng )勺油(yóu ),待油(yóu )六成(chéng )热下鱼,煎(jiān )至(zhì )微(wēi )黄。煮(zhǔ )沸瓦煲里的清(qīng )水,放(fàng )入(rù )煎煮好的鲫鱼(yú )和(hé )其他材(cái )料(liào ),武火煮沸,转中(zhōng )小火煲一(yī )个半小时,下盐(yán )调味(wèi )即可品尝。
