做法:洗净宰好(hǎo )鲫(jì )鱼,洗(xǐ )净淮山和薏米(mǐ )。用清水把(bǎ )陈皮(pí )泡软,拍裂(liè )一小(xiǎo )块(kuài )姜,热锅,用姜块在(zài )锅上擦一遍,放(fàng )两勺(sháo )油(yóu ),待(dài )油六成(chéng )热下鱼(yú ),煎至微黄。煮沸瓦煲(bāo )里的清水,放(fàng )入(rù )煎(jiān )煮好的鲫(jì )鱼和其他材(cái )料,武火煮沸,转中小火煲一(yī )个(gè )半小时(shí ),下(xià )盐调味即可品(pǐn )尝(cháng )。
