做(zuò )法:洗净(jìng )宰好鲫鱼,洗净(jìng )淮山和薏米。用(yòng )清(qīng )水(shuǐ )把(bǎ )陈(chén )皮(pí )泡(pào )软,拍裂一(yī )小(xiǎo )块姜,热锅(guō ),用姜块在(zài )锅上擦一(yī )遍,放两勺油,待油六成热下鱼(yú ),煎(jiān )至微黄。煮沸(fèi )瓦煲里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武(wǔ )火煮(zhǔ )沸,转(zhuǎn )中(zhōng )小火煲一个(gè )半小时,下(xià )盐调味(wèi )即可(kě )品尝。
