做法(fǎ ):洗净(jìng )宰好(hǎo )鲫鱼(yú ),洗(xǐ )净淮(huái )山和薏米。用清(qīng )水把陈皮泡软,拍(pāi )裂一(yī )小(xiǎo )块姜,热(rè )锅,用姜块(kuài )在锅(guō )上擦一遍(biàn ),放(fàng )两勺油,待(dài )油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放入(rù )煎煮(zhǔ )好(hǎo )的(de )鲫鱼和(hé )其他(tā )材料,武火煮沸,转中小火煲一个半小时,下(xià )盐调味即(jí )可(kě )品尝(cháng )。
