做(zuò )法:春(chūn )笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡(pào ),生姜(jiāng )切片(piàn ),葱切(qiē )成(chéng )段(duàn )。锅(guō )烧热(rè ),倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉(ròu )片(piàn )、葱段翻炒1分(fèn )钟(zhōng )左右。再加入(rù )生(shēng )抽(chōu )、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少(shǎo )量(liàng )清水半(bàn )掩住春笋,盖上锅盖(gài )大(dà )火煮开后(hòu )转中火。煮到水快熬干的时候加入盐(yán ),翻炒(chǎo )均匀稍收(shōu )汁时(shí )盖上锅(guō )盖焖(mèn )。
