做法(fǎ ):洗净宰(zǎi )好(hǎo )鲫鱼,洗净(jìng )淮山(shān )和薏米。用清水(shuǐ )把陈皮泡软(ruǎn ),拍裂(liè )一(yī )小(xiǎo )块姜,热锅,用姜(jiāng )块(kuài )在锅(guō )上擦(cā )一遍,放(fàng )两勺油,待(dài )油六成热(rè )下鱼,煎至微黄。煮(zhǔ )沸瓦煲(bāo )里的清(qīng )水,放入煎(jiān )煮(zhǔ )好的鲫鱼和其(qí )他(tā )材料(liào ),武火(huǒ )煮(zhǔ )沸,转(zhuǎn )中小火(huǒ )煲一个半(bàn )小时,下(xià )盐(yán )调味即可(kě )品尝。
