做法(fǎ ):春笋切成片后加(jiā )少(shǎo )许(xǔ )盐捞(lāo )出(chū )后用(yòng )清水浸泡,生姜(jiāng )切片(piàn ),葱切(qiē )成(chéng )段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左右。再(zài )加(jiā )入生抽、老抽(chōu )、蚝(háo )油(yóu )翻炒均(jun1 )匀,加入少(shǎo )量(liàng )清水(shuǐ )半(bàn )掩(yǎn )住春(chūn )笋,盖上(shàng )锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快(kuài )熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖(gài )焖(mèn )。
