做法:春(chūn )笋切(qiē )成片后加少(shǎo )许盐捞出后用(yòng )清水(shuǐ )浸泡,生(shēng )姜(jiāng )切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝油(yóu )翻(fān )炒均(jun1 )匀,加(jiā )入少量清(qīng )水(shuǐ )半掩(yǎn )住春笋(sǔn ),盖上锅(guō )盖大火(huǒ )煮开后(hòu )转中火。煮到(dào )水(shuǐ )快熬(áo )干的(de )时(shí )候加(jiā )入盐(yán ),翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖。
