做法(fǎ ):洗净宰(zǎi )好鲫鱼(yú ),洗净淮山(shān )和薏(yì )米。用清水把陈皮泡软,拍裂一(yī )小(xiǎo )块姜(jiāng ),热锅,用姜(jiāng )块在(zài )锅上(shàng )擦(cā )一(yī )遍,放两勺油,待(dài )油六成热下鱼(yú ),煎(jiān )至微黄(huáng )。煮(zhǔ )沸(fèi )瓦煲里的清水,放入煎煮(zhǔ )好(hǎo )的(de )鲫鱼和其(qí )他材(cái )料,武火煮沸(fèi ),转中(zhōng )小(xiǎo )火(huǒ )煲一(yī )个(gè )半(bàn )小时,下盐调味即可品尝。
