做法:春(chūn )笋切成片后加(jiā )少许盐捞出后用清(qīng )水(shuǐ )浸(jìn )泡,生(shēng )姜切(qiē )片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入(rù )生姜(jiāng )、春笋(sǔn )、牛肉片(piàn )、葱段(duàn )翻炒1分(fèn )钟左(zuǒ )右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩(yǎn )住(zhù )春笋,盖上锅(guō )盖大火(huǒ )煮开后转中火。煮到(dào )水(shuǐ )快熬(áo )干的时候加入盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅(guō )盖(gài )焖。
