做(zuò )法:春笋切成片后加少许盐(yán )捞出(chū )后(hòu )用(yòng )清水(shuǐ )浸泡,生姜切(qiē )片,葱切(qiē )成(chéng )段(duàn )。锅(guō )烧(shāo )热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加(jiā )入(rù )少量清(qīng )水半掩住春笋,盖(gài )上(shàng )锅盖(gài )大火煮开(kāi )后(hòu )转中(zhōng )火。煮(zhǔ )到(dào )水快熬干的(de )时候(hòu )加入盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅(guō )盖焖(mèn )。
