做法(fǎ ):洗净宰好(hǎo )鲫鱼(yú ),洗净淮山和(hé )薏米(mǐ )。用清水把陈皮(pí )泡(pào )软,拍裂一(yī )小(xiǎo )块姜(jiāng ),热锅,用姜(jiāng )块(kuài )在锅(guō )上擦一(yī )遍,放两勺油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲(bāo )里的(de )清水,放入(rù )煎煮(zhǔ )好的鲫鱼和其他(tā )材料,武(wǔ )火煮沸,转中(zhōng )小(xiǎo )火(huǒ )煲(bāo )一个半(bàn )小(xiǎo )时(shí ),下盐调味即可品尝(cháng )。
