做(zuò )法:春笋切(qiē )成(chéng )片(piàn )后加少许盐(yán )捞出(chū )后用清(qīng )水浸泡(pào ),生(shēng )姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放入(rù )生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒(chǎo )1分钟左(zuǒ )右(yòu )。再加入(rù )生(shēng )抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入(rù )少(shǎo )量清水半掩住(zhù )春(chūn )笋,盖上(shàng )锅盖大火煮开(kāi )后转(zhuǎn )中火(huǒ )。煮到水快熬干的(de )时候(hòu )加入盐(yán ),翻(fān )炒均匀稍(shāo )收汁时(shí )盖(gài )上锅(guō )盖焖(mèn )。
