做(zuò )法:洗净宰(zǎi )好鲫(jì )鱼,洗(xǐ )净(jìng )淮(huái )山(shān )和薏米。用清水把(bǎ )陈皮泡软,拍裂(liè )一小块(kuài )姜,热锅(guō ),用(yòng )姜(jiāng )块在锅上擦(cā )一(yī )遍,放两(liǎng )勺油(yóu ),待(dài )油六(liù )成(chéng )热(rè )下鱼,煎(jiān )至微(wēi )黄。煮(zhǔ )沸瓦煲里(lǐ )的清(qīng )水,放入煎煮好的鲫鱼和其他材(cái )料,武火(huǒ )煮沸,转中(zhōng )小火煲一个半小时,下盐调(diào )味即可品(pǐn )尝。
